For some reason I see her as listening to a variety of music. After all, she's like, what, 70, so a lot of music would have been made over the span of her life.
Besides, though music isn't really a big part of the books, it seems unlikely that, in a school full of teenagers, Minerva wouldn't have been exposed to all sorts of music (Muggle bands included) via their record players and boom boxes, etc in the thirty-odd years that she's been a teacher.
I pretty much figure she'd like classical and maybe opera, very likely a bit of Celtic (bagpipes, Enya, Clannad, etc), but I could see her listening to some of the hippie music (because of the deep lyrics) and probably a little bit of '80s soft/stadium rock, because that stuff's pretty mild and some of those songs are freaking awesome no matter who you are. The latter two are probably things that she would have picked up from her students.
I couldn't see her being into modern rock (although Three Day's Grace's "Riot" kinda reminds me of her in the 5th book *shrugs*) or heavy metal. She would defiantely hate disco and rap, and (unfortunately, because it's one of my favorite genres) she'd probably hear dance/techno music and just think, "WTF?"

I could be completely wrong, but I think she would listen to more than one style, but that amongst those styles would be jazz. She was born about the right time for when jazz became really popular in the muggle world and it just appeals to so many different audiences.

I couldn't imagine Minerva listening to anything other than classical. I mean, she's not a classical music snob, but she appreciates the beauty in fine art. The genre of classical music is so expansive, it's not as boring as one might expect. I can see her listening to heavy romantic works; some early 20th century stuff.
That's one thing that bothers me. JK didn't put any music in the books. What about the budding magical musicians of Hogwarts?

I think she'd listen to both classical and opera, with some other styles mixed in. Just as long as the music was beautiful. And yes, that does mean I think opera is beautiful. I'm currently on this Verdi kick... anyway, I think she would have diverse likes but still be tasteful.
