Personally, I'm neutral on the whole fluff/angst debate, simply because I write pretty much angst and drama but read fluff and romance avidly.
I don't like fics with them having kids. Just...no.
I don't like them adopting Harry either, because it is not at all canon.
The kind of story I most like is something that could have happened behind the scenes within canon HP, something Harry just never knew about. So, for example, if they are married, I only like it if their partnership is a tightly guarded secret which inflicts a burden on both of them.
OOCness bothers me, unless there is a very well articulated reason for it. I.E. Minerva being influenced by some strange substance in her pumpkin juice or a spell, etc.
Fluff must actually have a plotline. I love when other couples on the staff are somehow involved.
Humor in ADMM is mostly them getting caught in some compromising position for me. And said story being written by a true shipper with respect for the relationship. I loathe crack!fics.
Lemons are okay as long as they are not completely lewd and explicit, and have an actual plotline besides sex.
Student teacher fics are okay, as long as nothing more physical than a kiss or two actually happens until Minerva is a mature adult much later.
So anyway, there you have it. I'm a rather picky fic reader, if I do say so myself.

I agree with you, admmityourlove, porn without plot bothers me a bit as well. As for being picky, I complete understand that, everyone has their favorites

I'm a huge fluff person...but quickly coming in second are the student/teacher fics. There's just something about forbiden love I guess. I can and will read angst, but I usually balance it one with a fluff to angst ration of 5:1 Also a huge fan of Hooch getting in the story and playing matchmaker...also the imaginative narratives. I once read a story on ff.net with the castle's perspective. Loved it. I'll stop rambling now

I like fluff But, you know, that kind of fluff that has some idea I don't know... cooking, chess match for example. Not the ones that one person just hugs another and tells her how much he loves her... And drama. Drama is great, too. Angsts are too long and too boring for me, but drama is good. I really don't like lemons. I don't know why... I've read only a few and none of them did satisfy me. Fics "let's adopt Harry and Hermione" are boring for me, too. It's sad, but they have usually one plot, sometimes a bit modified... Though, I like fics where they have kids and there's a war, and there's a drama... Half sweet, half bitter. And when they are in some danger, or hiding somewhere. Maybe that's because of my school lectures about II WW (and battle of Grunwald, and Romeo and Juliet - seriously, our Ministry of Education is sick ), but those fics are exciting, really Oh, oh, and student/teacher fics... NO. Just no This is kinda sick, not exciting
