So my copy of Beedle the Bard arrived today.
According to page XI and 81, Minerva serves as headmistress after Deathly Hallows for at least a little while.
Yay!

Just that she was an animagus, but never used her form to get away w/ deception or trickery except in service to the Order. (Context was a discussion of animagi and that the MoM required them to be registered b/c they could get up to lots of true mischief otherwise.)
